    Has anyone used this addon yet? I'm interested but I can't find a demo anywhere. Is it possible to change the layout of the latest posts display?

    I use the Latest Topic addon on my forum. I think it does the same thing. Oh wait, you're looking for the latest comment. Look at the Latest Discussions addon. I made a mod to this on my site for Categories. Take a look.
