is there a way to select which page to go to on a discussion?

for example, each time someone enters a discusson with say 5 pages, they are sent to page 1, and then have to scroll to the bottom to select page 5 where the new posts are

can it default to the last page? or have a list of page numbers in the discussions page, for each discussion

You need to be signed in for that. And the first time you enter the discussion, you're taken to the first page, later on you arrive to the last item you've seen.

I also have a v1 install, I don't have a page list before entering a discussion. Maybe it was a plugin.

Anyway for vanilla2, you'll need a plugin too.
