You may have problems with them from time to time, but they do nothing but help. This is the same with any standard, in any industry. They are a necessity. Without them, it would be pure chaos. And no one but the creator would ever be able to do anything with it (whatever "it" may be).
Bugs, you obviously have never had a client demand $2000.00 back because the web site you built for him looked "crap" on an old PC running Internet Exploder with the window half-open and the light shining in at a 79 degree angle while he half-squinted with a slight slant of his head wearing lightly tinted sunglasses?
I was able to set him straight by showing him that I wrote to "standards" and that's all I ever promised. As for limiting potential, that depends on your perspective, I don't think having your creation look exactly as you designed it limiting in any way.
I don't see how they can limit potential either, as they are not a set of laws, they are standards. Certainly there are times when you need to go beyond, and that is fine.
I think some people are confusing "standards" with "rules" or "laws".

I really don't understand what you mean when you say there shouldn't be standards. Do you mean you should be able to use any tag you want, and ever browser should be smart enough to guess what you mean? You do understand that your websites using "only tables and zero standards" only worked because of web standards, right? Without standards you would make websites using no tags at all, just plain text all the way
