How do I Remove the "New Discussions" button for the main page?
I want the members to create new threads from within the categories (they don't seem to look at where they are posting). I would like to remove the "New Discussions" button from the home page, therefore forcing them to look at the categories.

custom.css in your theme.
you can also use the search feature for customizing theme as well as custom.css and on the documentation page, wiki and turorials for themes - should give you then answer to every question you might have.

what version? have you ever tried firebug? or a web developer tool. to find elements and hide them.
