How hard would it be to add new fields in the Membership Application?

First of all, Vanilla is wonderful -- thank you to the developers. I've installed the ExtendedApplication and Discovery extensions, which are working great, but I still need a few more fields like Phone, Address, Affiliation, etc... Also, it would be good if the member would be able to update the new fields after they login too. I've searched all over and am trying to learn how to make extensions, but I need a bit more guidance. Any help in the right direction would be great!
