Is it possible to have different themes per category?
I'm looking for the ability to have different colors and a different header image depending on the category selected. Is that possible, and is it something you do in the software, or is it better to do it in the theme itself (coded in the theme)?

with a plugin - you can turn it on and off and still keep the theme the same.
if you program it into the theme - you have what you have until you change themes or modify theme.
different image displayed in specific category.

add the image via categories in the dashboard.
haven't tried this but it also might help you.

You can do it in a single themes CSS.
Vanilla adds the Class .Category-CategoryName to the body of every page.
