You set the mobile theme in your /conf/config.php like that: $Configuration['Garden']['MobileTheme'] = 'mobile';

Create your own theme and change that MobileTheme line in your config.

If you are a beginner, you have to learn the basics of HTML and CSS. Without them, you have no chance. You might want to try the "Annotated Theme" which makes it easier to understand how you can theme Vanilla, but you still need to know CSS!
