Charset character

I'm developing a website for a French client and charset encoding doesn't works.

I've tried using charset UTF-8 and the iso-8859-1 but i still get this erros.

Can you help me ?

Where did you try to change the charset? Where do errors appear? Vanilla uses UTF-8 everywhere by default.
