Moved database - strange characters

Can anyone suggest how I should alter my database to avoid all ' characters being replaced with â€" or ’?

    here is a document about Vanilla, MySQL and character encoding. The whole thing is worth a read, and instructions for how to fix things can be found under "Cleaning".

    thanks. wow, it's gonna take some work. i thought it might be OK just to change the encoding of the table. oh well.

    Yeah, but once you've done all that you'll have a super setup where you can have people enter pretty much any character and it'll work. Good luck with the fixing. :)
