I'm getting several 500 Internal Server Errors, have a look below at the folders throwing the error. Is this my hosts problem? This is a new installation using the hosts Softaculous installer.

Generally, it is not recommended to use 3rd party installers. It is always better to do the installation manually. It is straightforward, and normally takes less than 10 minutes start to finish.
You can try checking the permissions for those folders.
A 500 status code is almost always a server configuration problem. Try finding some error logs to get more information on that error.
But I totally agree with whu606. In order to make this an installable package by Softaculous, they have to change Vanillas core files which makes it hard/impossible for us to find out what exactly goes wrong. Set it up by yourself. That has only advantages.
