How to configure the Profile Extender (2.1b1)?

I am not quite sure on how to configure the profile extender:
What is "Hide Fields" supposed to do?
How can "Custom Information -> Label / Value" be removed from the Edit Profile page (if I don't want anybody to be able to add custom info; or am I mistaken and this option is only available because I am logged in as administrator?)?

Hide fields lets you hide fields that are in by default.
You see it on every profile because you have the
Plugins.ProfileExtender.Add

But the default profile only has the following fields:
I guess it would not make any sense to hide any of these, but just in case, how do you know what to put into the "Hide Fields" box? For example I tried "Gender", but nothing happened.
That's strange, because I am only in the Administrator group, and Plugins >> ProfileExtender >> Add is not set. Or do the role settings for Administrator not matter because the admin has all permissions anyway?
I will have to look into the hidden fields later (no access to a beta right now).
The original admin always has all permissions.

I guess you didn't have a chance to look at those hidden fields yet. I played around with that input field some more, but didn't find out how it's supposed to work, because whatever I enter nothing happened (and I'm too tired now to take a look at the code, which probably does not reveal anything to my untrained eyes anyway).
I actually forgot about this thread.
Labels in the hide fields box will not be displayed on user profiles unless you have the right permissions (Which appears to be the generic 'Garden.Settings.Manage' admin powers).
I can see this being helpful in requiring something for registration but not showing it on the profile to everyone.
