We removed the "gender" field but we would like to add additional fields that can be filled in by text box such as "name" and "organisation"

There is a plugin called Profile Extender available for the beta here: https://github.com/vanillaforums/Garden/tree/master/plugins/ProfileExtender

You would have to backport it to run on 2.0.18.10. If you don't feel comfortable backporting it, you should not run the beta to use this plugin.
