Hosting Question - About to purchase 1 year of hosting

About to purchase a year of hosting for my new smaller project, wondering if any of these options are better for vanilla? I usually just go with Linux and have only worked with shared hosting in the past. This is shared VPS (only a few sites per a box) so the option bar has risen. Any input? Mostly using cpanel because I'm a tool.

I do not think that this is the right place for talking about "what is the best OS". The best will be to stick with an OS that has wide support.
From what I read here, I'd say there are only Linux users. Well, there might be some Windows users, but the support will be better for Linux.
Apache is supported out of the box, getting Nginx up and running is a little bit more effort. You want to work only from cPanel, so you might like to start with a preinstalled LAMP stack and there is only one option in the list above.
So I would recommend you to start with the first option in the list. Besides of that, I would bet it is always possible to change that later on.
