Need basic .php help

Have just started checking out vanilla and it looks great.

I can work my around xhtml and css fairly well but am having a bit of difficulty getting my head around the way all of the .php file work together.
I've worked out some basic things such as editing certain text and changing url's etc.
I'm having trouble though changing the page heading from Vanilla to my own title. Looking at the code below, my first guess was to find where 'BANNER_TITLE' is located and change it there.

'.$this->Context->Configuration['BANNER_TITLE'].'

Well I found that in the settings.php file but when I changed 'BANNER_TITLE' from 'Vanilla' to something else, nothing changed.
Sorry if this is a really dumb question, but I couldn't find any simple explanations on this forum.
If anybody knows of some tutorials on this, that would be great...

No need to edit any files for this one..

Dashboard -> Site Settings -> General -> Application Title
