Display language is set via a locale pack. You can find them here: http://vanillaforums.org/addon/browse/locales/recent/2/
You put them in the
/localesfolder then activate them via the dashboard.Search first

Whenever you are doing something with language files, it is a good idea to delete all *.ini files in
/cache
