Possible to revert back to Vanilla 1?

I'm currently using 2.1.11 and am curious if it's possible to revert back to an older version of Vanilla 1. If so, is it as simple as downloading the files and having them override the existing, just as I would do if I was upgrading to the latest version?

No, there's no "go back to 2009" process. You'd have to code your tool. They are completely different systems. Vanilla 1 is no longer supported by anyone.

Vanilla 1 is a vastly different beast than 2.1.x. It might as well be separate forum software. You could, of course, migrate the data manually, but I think this is a bad idea. Vanilla 1 is not currently maintained.
