I cannot do clean install as I have many categories and discussions that will be lost on clean install. Please check the recent error log attached and tell me what is going wrong.
I personally did not respond any more because the last error has been a "something has gone wrong" which can be looked up quite easily. I don't like if people are not doing anything to solve their problems by themselves

That is why I referenced it as "test forum/domain".
That way you have a test-ground - also for testing future versions before taking it to your live forum.
As Kaspar has suggested, you should set up a clean, fresh install of Vanilla for testing purposes.
Make a copy of your live database, and then use that as the database for your clean install.
500 errors reference an issue on the web server. It is not Vanilla specific.

What you did is put a new install on top of an old install.
Please chech with your host provider how to setup a secondary domain.
You "latest" error log show entries from end of September.
What do you see when you run /utility/structure?
It leads to Database Structure Upgrades and when I click Scan it leads to

Make sure your htaccess file permissions are set to 0644
I suspect people are not responding because you are not doing what is suggested.
You have been told that a 500 error is an error on your webserver, not a specific Vanilla error.
There is no way for anyone else to guess what your issue night be.
You were asked to set up a clean install of Vanilla 3.2, which you have not yet done.
This is NOT a Vanilla specific issue. It is an issue on your webserver. It has not been resolved because you have not taken steps to resolve it.

If you I do clean install I tested that it works but doing that will delete my categories and other updated settings.
That is why it is suggested to have a secondary domain on which you do your tests.
IF you would do it on your live/main domain, you would ofc make a backup of your installation first, which then can be restored afterwards.
Your forum installation does not hold your forum database (you would ofc make a backup of your database aswell)
Regular backup of both is highly recommended.
Testing via a secondary domain is highly recommended.

After removing the non existing plugins from config.php I get the same old error that came at the start that is

That is good to have cleared from your config but that is not what you was asked to do.
It is a troubleshooting step:
Deactivate everything - does error away?
If so, then enable ONE plugin at a time, test, then enable the next, untill you get the error then you have the culprit.
... and what have you been told to do when you hit an error 500?
